Fruity Cheese Cupcakes
- 2 large pkg. cream cheese, at room temperature
- 2 eggs
- 3/4 c. sugar
- 1 tsp. vanilla
- 1 Tbsp. lemon juice
- 1 box vanilla wafers
- 1 can cherry pie filling
- 1 can blueberry pie filling
- 1 can strawberry pie filling
- Put cupcake papers in cupcake pans.
- Place one vanilla wafer in each paper, round side down.
- Beat eggs until fluffy; add cream cheese, sugar, vanilla and lemon juice.
- Mix very well.
- Fill cupcake papers a little more than full with mixture.
- Bake at 325u0b0 for 25 minutes.
- Cool completely.
- Place 1 tablespoon of cherry pie filling in the middle of each cupcake.
- "You may also use blueberry or strawberry pie filling."
- Yields 20 to 24 tarts.
