Fruity Cheese Cupcakes

  1. Put cupcake papers in cupcake pans.
  2. Place one vanilla wafer in each paper, round side down.
  3. Beat eggs until fluffy; add cream cheese, sugar, vanilla and lemon juice.
  4. Mix very well.
  5. Fill cupcake papers a little more than full with mixture.
  6. Bake at 325u0b0 for 25 minutes.
  7. Cool completely.
  8. Place 1 tablespoon of cherry pie filling in the middle of each cupcake.
  9. "You may also use blueberry or strawberry pie filling."
  10. Yields 20 to 24 tarts.
