Quinoa-Black Bean Burger
- 1 teaspoon Olive Oil
- 1 whole Carrot, Peeled, Grated
- 2 Tablespoons Onion, Chopped
- 2 Tablespoons Ketchup
- 2 teaspoons Paprika
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Sea Salt
- 1/2 teaspoons Cayenne Pepper
- 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
- 1- 1/2 cup Cooked Quinoa (cooked According To Package Instructions But Use Stock Instead Of Water)
- 1/2 cups Panko, More As Needed
- 2 Tablespoons Olive Oil, For Frying, More As Needed
- 6 whole Sandwich Rolls Or Buns
- 1/4 cups Mayonnaise, Creme Fraiche, Greek Yogurt Or Sour Cream
- 2 Tablespoons Fresh Lime Juice
- 1 Tablespoon Freshly Chopped Cilantro
- 18 teaspoons Ground Black Pepper
- In a skillet, saute the onion and carrot in the olive oil over medium heat until softened, about 8 minutes.
- Then remove from heat.
- In a small bowl, mix the ketchup, paprika, ground cumin, cinnamon, sea salt and cayenne together.
- Set aside.
- Pour the black beans, onions and carrots into a large bowl.
- Using two forks or a pastry blender, smash the black beans to break them up as much as possible.
- (You can also use a food processor for this.)
- Add in the ketchup and spice mixture and mix until well blended.
- Fold in the cooked quinoa and the panko.
- Form the mixture into six patties.
- Heat 2 teaspoons olive oil in a large non-stick skillet over medium heat.
- Add the patties and cook for 5-6 minutes on each side.
- Mix the aioli ingredients together in a small bowl.
- Serve spread on the buns with the finished burgers.
- Cassies Notes: If you prefer, you can place the patties onto a greased baking sheet and bake at 400 F for 15-20 minutes.
