Mexican Goulash

  1. Preheat oven to 350 degrees F.
  2. Cook pasta.
  3. While pasta is cooking, start browning ground beef.
  4. When about halfway done, add jalapeno, onion and bell pepper.
  5. Season with salt and pepper.
  6. Cook until beef is cooked through and veggies and tender.
  7. Then add tomato paste and water and cook additional 5 minutes.
  8. Add drained tomatoes and black beans.
  9. In a large bowl, combine pasta, beef mixture and 1 1/2 cups shredded cheese.
  10. Pour into greased 13x9 dish.
  11. Cover and cook 30 minutes.
  12. Uncover and top with remaining cheese and cook additional 10 minutes or until cheese has melted.
