English Traditional Braised Red Cabbage With Apples(Serves 10 To 12 People)

  1. First discard the outer leaves of cabbage, cut it into quarters and remove the hard stalk.
  2. Then shred the rest of the cabbage finely.
  3. In a fairly large casserole, arrange a layer of shredded cabbage, seasoned with salt and pepper, then a layer of chopped onions and apples with a sprinkling of garlic, spices and sugar.
  4. Continue with these alternate layers until everything is in.
  5. Pour in the wine vinegar, then lastly add dots of butter on top.
  6. Put a tight lid on the casserole and let it cook very slowly in the oven for 2 to 2 1/2 hours, stirring around once or twice during the cooking.
