Filo triangles recipe

  1. Preheat oven to 180C (350F).
  2. Line two baking trays with baking paper if making all triangles now.
  3. Mix together cheeses, spinach, eggs and nutmeg.
  4. Place filo sheets on a work surface and cut each into three rectangles.
  5. Take one rectangle and gently brush with melted butter.
  6. Spoon 1 tbsp of cheese mixture in one corner.
  7. Fold the rectangle from that corner diagonally to make a point, then fold over again in the opposite direction.
  8. Continue to fold pastry over itself, until the entire sheet is wrapped around the filling in a triangle shape.
  9. Repeat with remaining pastry and filling.
  10. Place on baking trays, then brush tops with a little more butter.
  11. Bake for 1520 minutes until golden.
