Baked Black Beans And Sausage Recipe
- 3 c. dry black turtle beans
- 4 c. chicken or possibly vegetable stock
- 8 ounce smoked sausage minced
- 3 c. minced onions
- 2 c. salsa
- 1/2 c. fancy molasses
- 1/4 c. packed brown sugar
- 2 tsp dry mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp. cornstarch
- 2 Tbsp. cool water
- Rinse beans.
- In bowl, cover beans with 3 times their volume of water.
- Let soak for 12 hrs or possibly overnight; drain.
- Use 18- to 24-c. (4.5 to 6 L) slow cooker; cook beans with stock on High for 3 hrs or possibly till tender.
- Add in remaining ingredients except for cornstarch and cool water; cook on High for 3 hrs.
- Whisk cornstarch with cool water; stir into slow cooker.
- Cook on High for 15 to 20 min or possibly till thickened.
- NOTES : Black beans give a modern twist to an old classic.
