Godfather'S Spaghetti Sauce With Italian Sausage And Red Wine
- 3 Tbsp. olive oil
- 1 Tbsp. minced garlic
- 1 onion, finely chopped
- 1 c. strong red wine
- 1 (28 oz.) can whole Italian tomatoes
- 1 (6 oz.) can tomato paste
- 1 Tbsp. sweet basil
- salt and sugar to taste
- 1 1/2 lb. mild Italian sausage (hot if desired)
- In a large pot, heat oil over low heat, add garlic and onion and cook until translucent.
- Stir in wine.
- Add tomatoes and paste (rinse can with water and add to pot).
- Add basil, salt and sugar to taste and stir.
- When sauce comes to light boil, add sausage (uncooked) and simmer over low heat for 3 to 4 hours, stirring occasionally and adding water if sauce gets too thick.
- Correct seasonings in last hour and partly cover pot.
- Serve over spaghetti and drink the rest of the wine.
- Flavor improves if refrigerated overnight.
- Serves 4 to 5.
