Lemon orzo primavera
- 1 tbsp extra virgin olive oil
- 1 cup orzo pasta
- 1 medium zucchini, grated
- 1 medium carrot, grated
- 1 zest of 1 lemon
- 1 can 14.5 oz chicken or veggie broth
- 1 1/2 tsp lemon thyme or reg thyme
- 1 parmesan, optional
- in Medium sauce pan heat oil on Med hi
- add cup of orzo, cook until lightly toasted, 2 min
- add zucchini and carrot, cook two mins
- add broth and zest
- bring to boil cook 10mins and until broth is absorbed
- stir occasionally
- stir in thyme and parmesan
