Asparagus Soup With Arborio Rice Recipe
- 4 Tbsp. margarine or possibly butter
- 2 lrg sweet onions, (preferably Vidalia), finely minced
- 2 1/2 lb asparagus, (tough ends removed), cut into 1/2" pieces
- 1 tsp dry thyme
- 1/2 tsp dry sage
- 1 x bay leaf
- 3 quart water Salt and pepper to taste
- 1 c. arborio rice
- 1.
- Heat margarine in a medium pot over low-medium heat.
- Add in minced onions, cover, and cook for 10 min, stirring occasionally, till onions arc softened.

- Add in asparagus, thyme, sage, and bay leaf.
- Stir to mix.
- Cover and continue cooking for another 10 min, stirring occasionally.

- Add in water, salt, and pepper Stir to mix.
- Raise heat to high, bring to a boil, then reduce heat to low and cook at a low-medium boil for 25 min, stirring occasionally.

- Stir in rice.
- Cover and continue cooking for about 45 min, stirring frequently, till rice is tender and broth is rich.
- (Stir frequently or possibly the rice will stick.)
- Remove bay leaf Taste for seasonings.
