Pizza Soup
- 1 lb. pork sausage
- 1 c. chopped onions
- 3/4 c. chopped bell pepper
- 1 (2.5 oz.) jar sliced mushrooms, drained
- 1 (14 oz.) jar pizza sauce flavored with pepperoni
- 1 (14 1/2 oz.) can diced Italian-style tomatoes (with basil, oregano, & garlic)
- 3 to 4 c. water
- 1/4 c. shredded Parmesan Cheese
- Shredded Mozzarella cheese (to sprinkle over top)
- Combine sausage, onions, and bell pepper in soup pot.
- Saute until sausage is fully cooked.
- Drain excess grease.
- Add mushrooms, pizza sauce, tomatoes, and water.
- Cook over medium-high heat for about 10 minutes.
- Stir in the Parmesan and keep hot until time to serve.
- Top each serving of hot soup with a generous sprinkling of mozzarella cheese.
- Makes 6 to 8 servings.
