Louisiana Gumbo Recipe
- 2 pound chicken pcs
- Sm. stalk celery, minced
- Sm. onion, minced
- Lg. bell pepper, minced
- Lg. can minced tomatoes (28 ounce.)
- 1 bag frzn okra
- 1 teaspoon creole seasoning
- 2 teaspoon gumbo file (grnd sassafros)
- 1/2 teaspoon grnd white pepper
- Skin chicken pcs and remove all visible fat.
- Simmer chicken in 2 qts of water till done.
- Remove chicken from broth (reserve broth) and debone.
- In a large stock pot, simmer these ingredients together for 2 hrs: chicken broth and meat, celery, onion, pepper, tomatoes, creole seasoning and pepper.
- After 2 hrs add in the okra and continue simmering till okra is tender.
- Add in gumbo file just before serving in bowls over a bed of rice.
