Louisiana Gumbo Recipe

  1. Skin chicken pcs and remove all visible fat.
  2. Simmer chicken in 2 qts of water till done.
  3. Remove chicken from broth (reserve broth) and debone.
  4. In a large stock pot, simmer these ingredients together for 2 hrs: chicken broth and meat, celery, onion, pepper, tomatoes, creole seasoning and pepper.
  5. After 2 hrs add in the okra and continue simmering till okra is tender.
  6. Add in gumbo file just before serving in bowls over a bed of rice.
