Red Velvet Muffins

  1. In a mixing bowl fitted with the paddle attachment, cream together butter and sugar until fluffy.
  2. Add eggs, vanilla and food coloring and mix well, then fold in sour cream.
  3. Preheat oven to 400 degrees.
  4. Combine flour, baking powder, baking soda, cocoa powder and salt in a large bowl, then stir in the butter mixture until just until combined.
  5. Fill a greased or paper-lined muffin tin two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  7. When cool enough to touch, remove to a wire rack.
  8. Serve with whipped cream cheese.
