Marsala Chicken
- 8 chicken legs, skinned
- 2 finely chopped onions
- 1 tsp. ground ginger
- 2 to 3 cloves ground garlic
- 1 Tbsp. salt
- 1 tsp. turmeric
- 1 Tbsp. coriander
- 1/2 Tbsp. cumin
- 1/2 tsp. red pepper
- pinch of black pepper
- 1/4 c. vegetable oil
- 1/2 c. plain yogurt
- 2 ripe tomatoes, chopped
- Heat oil in large pan.
- Add chopped onions and fry until golden brown, then add all the spices.
- Fry for 1 minute.
- Add tomatoes and fry to form a paste.
- (You may have to add 1/4 cup water.)
- Now add the chicken and yogurt.
- Cover pan.
- After 2 minutes, lower heat to medium and cook until chicken is very tender.
- Serve with pita bread, tortillas or rice.
