Toasted Italian Biscottis
- 1 1/2 c. sugar
- 1/2 c. oleo or butter
- 4 eggs
- 2 1/2 c. flour
- 1/8 tsp. salt
- 2 level tsp. baking powder
- 1 tsp. pure vanilla
- 1/2 tsp. anise flavoring
- 1/4 c. milk
- 1 jar or 1 c. cherries, cut up
- 1 c. chopped nuts
- Sift dry ingredients and set aside.
- Cream butter and sugar. Add eggs, one at a
- time, until light and creamy.
- Fold in flavors and milk. Then fold in the dry ingredients (flour, salt and baking powder).
- Fold in cut up cherries and nuts.
- Bake in a thick jelly roll pan (greased and floured), 15 1/2 x 10 1/2 x 1-inch.
- Bake at 350u0b0 for 30 minutes.
- Cut in 3 long lines and then in pieces 1-inch across.
- Lay each piece in pan again and toast in oven until light tan.
