Kid Approved Pumpkin Soup
- 2 tablespoons butter
- 1 red apple, peeled and diced (we use Fuji)
- 1 (15 ounce) canplain pumpkin puree
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon sugar
- 14 teaspoon nutmeg
- 1 cup apple juice
- 2 cups broth, chicken
- 14 cup half-and-half or 14 cup heavy whipping cream
- Cook the apple in the butter on medium heat in a soup pot for about 5 to 7 minutes, until the apples are tender and even a little browned on the edges.
- In a bowl, mix together the pumpkin, sugar, salt, pepper, and nutmeg.
- Add the pumpkin mixture to the apples and stir.
- Slowly add the apple juice and broth.
- Heat until well-heated, but not boiling.
- Stir in the cream or half and half and serve in a bowl or a small hollowed out pumpkin.
