Kid Approved Pumpkin Soup

  1. Cook the apple in the butter on medium heat in a soup pot for about 5 to 7 minutes, until the apples are tender and even a little browned on the edges.
  2. In a bowl, mix together the pumpkin, sugar, salt, pepper, and nutmeg.
  3. Add the pumpkin mixture to the apples and stir.
  4. Slowly add the apple juice and broth.
  5. Heat until well-heated, but not boiling.
  6. Stir in the cream or half and half and serve in a bowl or a small hollowed out pumpkin.
