Turkey Burritos(Low-Fat)
- 1 c. tomato juice
- 2 tsp. cornstarch
- 1 (12 to 16 oz.) jar mild salsa
- 2 tsp. olive oil
- 1 bunch green onions, thinly sliced
- 1 Tbsp. chili powder
- 1 lb. ground turkey breast
- 1 (15 oz.) can red kidney beans, drained
- 1 (4 oz.) can chopped green chilies
- 6 Tbsp. nonfat sour cream
- 10 (8-inch) flour tortillas
- 1 (8 oz.) pkg. nonfat shredded Cheddar cheese
- 1/4 c. pitted ripe olives (optional)
- 1 small tomato
- Preheat oven to 350u0b0.
- In a 2-quart saucepan, stir tomato juice, cornstarch and 1/2 cup water until smooth.
- Cook over medium heat, stirring, until mixture boils and thickens slightly. Boil 1 minute.
- Stir in salsa.
- Pour mixture into a 13 x 9-inch glass baking dish; set aside.
