Caribbean Turkey Wrap
- 2-1/2 cups Kraft Poppyseed Dressing
- 1/3 cup frozen orange juice concentrate, thawed
- 16 cups chopped deli turkey
- 8-1/2 cups cooked long-grain rice, cooled
- 6 cups canned black beans, drained, rinsed
- 5 cups jicama, cut into thin julienne strips
- 5 cups red peppers, chopped
- 5 cups mangoes, peeled, finely chopped Whole Foods 2 ea For $4.00 thru 02/09
- 1-1/4 cups cilantro, finely chopped
- 3/4 cup jalapeno peppers, seeded, chopped
- 1-1/4 tsp. ground cumin
- 40 each flour tortillas (12 inch)
- Mix dressing and orange juice concentrate until well blended.
- Toss all remaining ingredients except tortillas in large bowl.
- Add dressing mixture; mix lightly.
- For each serving: Spoon 1 cup of the chicken mixture onto each tortilla.
- Fold in sides of tortilla, then roll up tightly from bottom.
- Cut diagonally in half to serve.
