Spinach Brownies
- 1 teaspoon Olive Oil
- 1 whole White Onion, Chopped
- 1 whole Shallot, Chopped
- 3 cloves Garlic, Smashed And Minced
- 1 bag (16 Ounce Bag) Frozen Chopped Spinach
- 2 cups Vegetable Stock (or Water)
- 1 cup Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Powder
- 2 whole Eggs
- 1 cup Milk
- 1/2 sticks Melted Butter
- 8 ounces, weight Mozzarella, Shredded
- 1/2 cups Parmesan Cheese, Grated
- 4 ounces, weight Feta Cheese, Crumbled
- Preheat oven to 375 degrees F .
- Lightly grease a 9x13 inch baking dish.
- Heat olive oil in medium saucepan over medium heat and saute onion, shallot and garlic until onion and shallot are clear.
- In same sauce pan add spinach with vegetable stock or water (use just enough to cover the mixture).
- Bring to a boil.
- Lower heat to simmer and cook until spinach is limp, about 3 minutes.
- Remove from heat and set aside.
- In a large bowl, mix flour, salt and baking powder.
- Stir in eggs, milk and butter.
- Mix in the spinach mixture and the mozzarella, parmesan, and feta cheese
- Transfer the mixture to the prepared baking dish.
- Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool before serving.
- Serve as an appetizer or side dish.
- Heck eat them for lunch!
