Buttermilk Corn Muffins (2 Points) Recipe

  1. Preheat oven to 425F.Combine first 6 ingredients in a bowl; make a well in center of mix.
  2. Combine buttermilk, oil, and egg whites in a bowl; stir well.
  3. Add in to dry ingredients, stirring just till moist.
  4. Divide batter proportionately among 15 muffin c. coated with cooking spray.
  5. Bake at 425F.
  6. for 12 min or possibly till golden brown.
  7. Remove muffins from pans immediately.
  8. Yield: 15 Muffins (serving size: 1 muffin)
