Southwestern Corn Salad
- 1 (8 3/4 ounce) can corn niblets
- 12 cup red onion, finely chopped
- 12 cup bell pepper, chopped
- 14 cup honey
- 1 teaspoon hot sauce, less if you like
- 14 cup reserved juices, from corn
- 3 tablespoons fresh-squeezed lime juice
- Mix together the corn, onion, and bell pepper.
- Whisk together the honey, hot sauce, reserved juices, and lime juice.
- Be sure to break up all the honey.
- Toss all ingredients together and refridgeirate overnight (see headnote.
