Chinese Noodle Soup With Chicken Balls
- 1 lb. ground chicken or turkey
- 1 clove garlic, minced
- 1 tsp. grated fresh ginger
- 1 Tbsp. oil
- 1 can (10 oz) condensed chicken broth
- 2 cups water
- 2 oz. rice vermicelli noodles, broken into 2-inch pieces
- 1 cup snow peas, cut into strips
- 1/4 cup chopped green onion
- 2 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- Combine chicken, garlic and ginger.
- Roll into 1-inch balls.
- Brown on all sides in oil in large saucepan.
- Drain off fat.
- Add broth and water.
- Bring to boil.
- Stir in noodles and snow peas.
- Cover and simmer over low heat until vegetables are crisp-tender, stirring occasionally.
- Add green onions and lemon juice.
- Serve immediately.
