Irish Potato Bake
- 4 cup corn chex (or chex of your choice)
- 4 tbsp butter, melted
- 3 cup seasoned, stiff hot mashed potatoes
- 1/2 cup sour cream
- 1/2 tsp onion powder
- 1/4 tsp seasoned salt
- 1 dash white pepper
- 10 oz frozen broccoli, cooked & drained
- 1 cup shredded cheddar cheese
- Grease 1 1/2 qt shallow baking dish.
- Thoroughly combine chex & butter.
- Set aside.
- Combine potatoes, sour cream, onion powder, salt, pepper, & broccoli.
- Stir gently until well mixed.
- Spread half of mixture in baking dish.
- Sprinkle with half of cheese, then half of crumbs.
- Repeat.
- Bake in 350F oven for 25 minutes or until crumbs are golden.
