Steak Salad with Jalapeno-Cilantro Dressing

  1. Remove stems, seeds and membranes from peppers; discard.
  2. Place peppers, cilantro and dressing in food processor; process until well blended.
  3. Pour half of the dressing mixture over steaks in shallow pan; cover.
  4. Marinate in refrigerator at least 30 min.
  5. or up to 1 hour.
  6. Remove steaks from marinade; discard marinade.
  7. Grill steaks 4 min.
  8. on each side or until medium doneness (160F).
  9. Cut across the grain into thin strips.
  10. For each serving: Toss 2 cups lettuce with 5 oz.
  11. of the meat, 1/2 cup tomatoes, 2 Tbsp.
  12. cheese and 1/2 cup croutons.
  13. Add 1/4 cup of the remaining dressing mixture; mix lightly.
  14. Serve immediately.
