Steak Salad with Jalapeno-Cilantro Dressing
- 24 each fresh jalapeno peppers
- 1 qt. fresh cilantro leaves
- 1 gal. KRAFT Italian Dressing
- beef flank steaks
- 6 gal. romaine lettuce, torn
- 1-1/2 gal. tomatoes, coarsely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1-1/2 qt. KRAFT 100% Shredded Parmesan Cheese - Full Moisture
- 1-1/2 gal. croutons
- Remove stems, seeds and membranes from peppers; discard.
- Place peppers, cilantro and dressing in food processor; process until well blended.
- Pour half of the dressing mixture over steaks in shallow pan; cover.
- Marinate in refrigerator at least 30 min.
- or up to 1 hour.
- Remove steaks from marinade; discard marinade.
- Grill steaks 4 min.
- on each side or until medium doneness (160F).
- Cut across the grain into thin strips.
- For each serving: Toss 2 cups lettuce with 5 oz.
- of the meat, 1/2 cup tomatoes, 2 Tbsp.
- cheese and 1/2 cup croutons.
- Add 1/4 cup of the remaining dressing mixture; mix lightly.
- Serve immediately.
