Peach and Cherry Summer Refrigerator Pie
- 1 pie crust, baked and cooled
- 1/4 cup tapioca
- 1 cup sugar
- 1-1/2 cup water
- 1/4 tsp. salt
- 2 tbsp. lemon juice
- 2 to 3 cups sliced fresh peaches
- Maraschino cherries cut in half (the kind of cherries in jars at supermarket) I don't measure....but probably use about 1/3C cherries. Just use whatever you like!
- Whipped cream topping
- Cook the tapioca, sugar, salt, water and lemon juice til clear and thick.
- Cool slightly.
- Add vanilla, sliced peaches and cherries.
- Pour into cooled pie filling and refrigerate.
- When cool, top with whipped cream.
