Omelette a la Cormac

  1. Finely chop white onion, ginger and chillies.. slice red pepper..fry off in a little olive or rapeseed oil until onions are translucent.
  2. Add mushrooms
  3. Beat eggs... pour over mixture in pan.
  4. Cook on a low heat until eggs appear almost cooked.
  5. Do not burn!
  6. Evenly place thinly sliced tomatoes on top.. sprinkle freshly chopped basil over, and place under broil (thats grill for us Europeans!)
  7. Until eggs are cooked.
  8. Garnish with chopped green onions and or chives
