Omelette a la Cormac
- 1 white onion
- 1 red pepper.. sliced
- 1 1/2 inch of fresh grated ginger
- 3 green chillies
- 6 eggs
- 6 button mushrooms
- 2 tomatoes
- 2 green onions
- 1 salt and pepper to taste
- 1 1/4 cup Basil leaves
- 1 chives to garnish
- Finely chop white onion, ginger and chillies.. slice red pepper..fry off in a little olive or rapeseed oil until onions are translucent.
- Add mushrooms
- Beat eggs... pour over mixture in pan.
- Cook on a low heat until eggs appear almost cooked.
- Do not burn!
- Evenly place thinly sliced tomatoes on top.. sprinkle freshly chopped basil over, and place under broil (thats grill for us Europeans!)
- Until eggs are cooked.
- Garnish with chopped green onions and or chives
