Banana Pudding(Old Fashioned)

  1. In the top of double boiler, combine sugar, flour and salt; stir in milk. Cook over boiling water, stirring until thickened. Beat egg yolks and add to hot mixture gradually. Continue cooking for another 5 minutes, stirring constantly. Add vanilla. Line a casserole dish with vanilla wafers, then sliced bananas. Pour a portion of custard over bananas; repeat layers, pouring rest of custard on the top. Beat egg whites until fluffy, adding 1/4 cup sugar. When egg whites form stiff peaks, pile on top of pudding. Bake in preheated 425u0b0 oven for 5 minutes or until golden brown. Serve warm or chilled.
