Chicken Fettuccine
- 3 slices uncooked bacon, cut up
- salt and pepper to taste (garlic pepper, if available)
- 1/2 tsp. basil (dried or fresh)
- 2 Tbsp. white wine
- 1/2 c. chicken stock (can or cube)
- few fresh spinach leaves, torn into bite size pieces (optional)
- 1 chicken breast, cut into pieces
- 1/2 tsp. fresh, minced garlic
- pinch of thyme (dried or fresh)
- 1 small zucchini, thinly sliced
- 1/2 c. half and half (or milk)
- 8 oz. fettuccine, cooked and drained
- 4 Tbsp. Parmesan cheese
- Cook bacon pieces
- in large saute pan until some of fat is cooked
- out.
- Add
- chickentieces.
- Sprinkle with salt and pepper and
- cook
- until
- bacon
- is
- done.tdd
- garlic, thyme, basil, zucchini,
- wine
- and chicken stock.
- Turn heat to medium-high and cook
- 1
- minute or so.
- Add half and half and cook until mixture starts to thicken.tdd spinach, fettuccine and cheese and heat mixture until it is bubbling hot.
- Toss to mix well and
- turn
- out on
- serving
- plate.
- Top
- with additional Parmesan, if desired.
