Triple Chocolate Ice Cream Cookie-wiches

  1. Prepare Slice 'n Bake Brownie Rounds as directed.
  2. Chill baking sheet 5 minutes in freezer.
  3. Scoop 15 (about 1/4 cup) ice cream portions onto chilled baking sheet.
  4. Return to freezer; freeze until ready to assemble sandwiches.Thaw ice cream portions 4-5 minutes at room temperature.
  5. Place 1 portion onto bottom-side of 1 cookie; top with another cookie, bottom-side down.
  6. Press cookies together gently.
  7. Smooth ice cream with knife, if necessary.
  8. Place onto baking sheet; freeze immediately at least 2 hours or until set.
  9. Wrap each frozen ice cream sandwich in plastic food wrap; place into large resealable freezer bag.
  10. Store frozen.
