Crockpot Guinness Beef Stew
- 1 12 lbs stewing beef
- sea salt
- ground pepper
- 1 tablespoon olive oil
- 1 cup vegetable broth
- 1 (14 ounce) can beef broth
- 1 cup Guinness draught
- 8 ounces baby portabella mushrooms
- 12 vidalia onion
- 2 bay leaves
- 1 teaspoon dried thyme
- Heat olive oil in pan.
- Cut beef into 1" cubes, add to hot oil.
- Season beef cubes with sea salt and freshly ground pepper to taste.
- While beef is browning, coarsely chop vidalia onion and put in crockpot.
- Add cleaned mushrooms, bay leaves, thyme, vegetable and beef broths.
- Once beef is fully cooked, dump it into the crockpot, juices and all.
- Add beer, cover, and cook on HIGH for 3-4 hours.
- Remove bay leaves before serving.
