Crockpot Guinness Beef Stew

  1. Heat olive oil in pan.
  2. Cut beef into 1" cubes, add to hot oil.
  3. Season beef cubes with sea salt and freshly ground pepper to taste.
  4. While beef is browning, coarsely chop vidalia onion and put in crockpot.
  5. Add cleaned mushrooms, bay leaves, thyme, vegetable and beef broths.
  6. Once beef is fully cooked, dump it into the crockpot, juices and all.
  7. Add beer, cover, and cook on HIGH for 3-4 hours.
  8. Remove bay leaves before serving.
