Diane's Stuffed Artichokes Recipe

  1. Cut tips off artichokes; rinse well.
  2. Open leaves a little.
  3. Stuff with slices of garlic and parsley.
  4. Stuff with bread crumbs.
  5. Place in large deep pot.
  6. Top artichokes with cheese and salt and pepper.
  7. Add in about 2-3 inches water.
  8. Add in about 2 Tbsp.
  9. extra virgin olive oil to each artichoke.
  10. Cover, cook low; make sure water does not evaporate.
  11. Baste occasionally.
  12. Cook till leaves are tender, about 1 - 1 1/2 hrs.
