Amazing Guacamole
- 7 ripe avocados
- 1/2 serrano chile, seeded, stemmed, and finely diced.
- 1 poblano pepper, seeded, stemmed, and diced
- 1 bunch cilantro, chopped
- 1/2 minced red onion
- 2 tbsp lime juice
- 1 tsp freshly cracked pepercorns
- 1 tsp Mediterranean sea salt
- 4 roma tomatoes, seeds and pulp removed, chopped
- Grip an avocado gently on one side with your hand.
- Using a large, sharp knife in the other hand, cut the avocado lengthwise around the seed.
- Open the two halves to expose the pit.
- Gently tap the pit with the knife with enough force so that the knife edge wedges into the pit, but not so hard as to cut all the way through.
- Test the knife remove the pit and discard.
- Scoop our the flesh of the avocado and place in mixing bowl.
- Using a fork, roughly mash the avocado.
- (Don't overdo it!
- Guacamole should be a little chunky.)
- Add the rest of the ingredients (prepared as noted in the ingredients) and stir to combine.
- NOTE the salt and pepper are to taste.
- Serve immediately or cover and refrigerate until serving.
