Parmesan-Yogurt Chicken
- 1 (2 lb) broiler-fryer chickens, skinned and cut up
- 2 tablespoons fresh lemon juice
- salt and pepper
- 12 cup low-fat plain yogurt
- 14 cup low-fat mayonnaise
- 14 cup scallion, siliced
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme
- 14 teaspoon cayenne pepper
- 14 cup parmesan cheese, freshly grated
- Preheat over to 350 degrees.
- In a large baking dish, arrange chicken in a single layer.
- Drizzle with lemon juice then sprinkle with salt and pepper.
- Combine yogurt,mayonnaise, scallions, mustard, worcestershire sauce, thyme and cayenne pepper ina small bowl and mix well.
- Spread mixture over chicken and bake for 50 minutes.
- Drain off juices.
- Sprinkle chicken with Parmesan cheese.
- Preheat broiler and broil chicken for a bout 3 minutes or until cheese melts and browns slightly.
