Chinese Fans
- 2 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 10 Tbsp. unsalted butter at room temperature
- 1 cup sugar
- 1 tsp. pure vanilla extract
- 1 large egg
- 1 Tbsp. milk
- zest of 1 lemon finely grated
- 1 large egg white lightly beaten
- Preheat oven to 350.
- Line 2 nonstick baking sheets with baking mats.
- Sift together flour, baking powder and salt.
- Set aside.
- In a bowl, use an electric mixer fitted with a paddle attachment.
- Cream the butter and 3/4 cup sugar until the mixture is light & fluffy.
- Add the vanilla, milk, egg and lemon zest. Slowly add dry ingredients.
- When well mixed, remove the dough from the bowl.
- Wrap the dough in plastic wrap and refrigerate until firm, about 1 hour.
- Divide dough into 4 equal parts.
- Row out each piece of dough between 2 pieces of plastic wrap to form a rough circle 8 inches across and a 1/4 inch thick.
- Peel off the top piece of plastic wrap, and use a pastry wheel to cut the circle into 6 equal wedges.
- Using the back of a knife, mark each cookie with 3 or 4 lines radiating from the point of the triangle. Brush with egg white.
- Sprinkle each group of wedges with 1 Tbsp. sugar.
- Transfer to cookie sheets.
- Bake until crisp and golden brown, 10-12 minutes.
- Cool on wire rack.
