Whole Wheat Pocket Bread Recipe
- 2 1/2 - 3 c. hot water
- 2 tbsp. yeast
- 1 teaspoon honey
- 3 c. whole wheat pastry flour
- 2 2/3 c. unbleached flour
- 1 tbsp. safflower oil
- 1 1/2 teaspoon sea salt
- 2/3 c. soy flour
- Stir water, yeast and honey.
- Add in remaining ingredients.
- Knead 10 min.
- Shape into loaf.
- Cut into 12 pcs and knead each piece.
- Roll out to 1/8 inch thick.
- Place on floured surface and cover with towel.
- Let stand 2 hrs.
- Turn over and place on ungreased cookie sheet.
- Bake at 450 degrees 5 min.
- Cover with towel till cold.
- Cut in half and fill.
