Gumbo

  1. Brown flour in lard to a golden brown, stirring constantly, to prevent burning or lumping.
  2. Add 1/2 chopped seasoning to browned flour; saute for 1 minute.
  3. Add this mixture to the 3 quarts of boiling water; mix.
  4. Add remaining seasoning and bouillon cubes; boil for about 10 minutes.
  5. Put in oysters; simmer for at least 30 minutes.
  6. Salt and pepper to taste, then bring to rapid boil.
  7. Add file; mix well.
  8. Take off heat.
  9. Let set for at least 15 minutes. Serve over boiled rice.
