BBQ Sausage Quesadillas

  1. In skillet over medium heat crumble and cook sausage and onions until brown.
  2. Stir in barbeque sauce.
  3. Lay 2 of the tortillas on a flat surface.
  4. Top each with 1/4 c cheese.
  5. Divide sausage mixture between the two.
  6. Sprinkle each with 1/4 c more cheese.
  7. Top with remaining tortillas.
  8. Heat a large skillet over medium heat.
  9. Add a small amount of oil to coat the bottom of the pan.
  10. Cook one quesadilla at a time until golden brown on each side, about 2-3 minutes per side.
  11. Cut into wedges and serve with sour cream and salsa.
