Coconut Shrimp
- 4-1/2 cups flour
- 1-1/4 tsp. salt
- 1-1/4 tsp. pepper
- Cleaned shrimp with tails on (21 to 25 ct.)
- 5 each eggs
- 2/3 cup water
- 1 qt. BAKER'S ANGEL FLAKE Coconut
- Mix flour, salt and pepper in shallow pan.
- Add shrimp; toss to coat.
- Beat eggs with water in large bowl with wire whisk until well blended.
- Dip shrimp in egg mixture, then add to coconut in bowl; toss to coat.
- Fry in deep-fat fryer at 350F for 3 to 4 minutes or until shrimp are golden brown.
