Pork Chop And Scalloped Potatoes Recipe
- Pork chops
- 2 tbsp. oil
- 3 tbsp. butter
- 3 tbsp. flour
- 1 teaspoon salt
- Pepper
- 1 c. lowfat milk
- 1 c. chicken broth
- 4 med. potatoes, pared and sliced thin
- Parsley
- Brown pork chops in oil.
- Remove from heat.
- Heat butter in saucepan.
- Stir in flour, salt and pepper.
- Cook 1 minute.
- Add in lowfat milk and broth slowly.
- Cook stirring constantly till sauce thickens.
- Butter a 11 x 7 x 2 baking dish and arrange potatoes.
- Pour sauce over potatoes.
- Place pork chops on top and cover with foil.
- Bake at 350 degrees for 1 hour.
- Makes 4 servings.
