Hearty Vegetable Chilli

  1. HEAT oil in large saucepan over medium het.
  2. Saute onion, garlic and mushrooms for 2 minutes.
  3. Add green pepper, celery and carrots and saute 5 minutes longer.
  4. Stir in tomatoes, chili powder and salt.
  5. Bring to a boil; cover and simmer for 25 minutes or until vegetables are tender.
  6. STIR in kidney beans and corn and cook, uncovered, about 5 minutes longer.
  7. SPOON into bowls and sprinkle with cheese.
