Hearty Vegetable Chilli
- 2 Tbsp. oil
- 1 medium onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, minced
- 1 1/2 cups sliced mushrooms
- 1 large green pepper, chopped
- 1 cup thinly sliced celery
- 3 medium thinly sliced carrots
- 1 can (19oz/540mL) stewed tomatoes
- 1 1/2 tsp. chili powder
- 1/2 tsp. salt
- 1 can (19oz/540mL) kidney beans, drained
- 1 can (19oz/540mL) whole kernel corn, drained
- 1 cup grated Cracker Barrel Cheddar Cheese
- HEAT oil in large saucepan over medium het.
- Saute onion, garlic and mushrooms for 2 minutes.
- Add green pepper, celery and carrots and saute 5 minutes longer.
- Stir in tomatoes, chili powder and salt.
- Bring to a boil; cover and simmer for 25 minutes or until vegetables are tender.
- STIR in kidney beans and corn and cook, uncovered, about 5 minutes longer.
- SPOON into bowls and sprinkle with cheese.
