Mixed Greens, Roasted Peppers and Feta Salad

  1. Add the mixed greens, red onion, roasted pepper, chick peas and goat cheese in a large salad bowl.
  2. Drizzle the olive oil and freshly grind some black pepper over the salad, toss until well coated.
  3. Squeeze some of the fresh lemon juice into the salad, toss to coat.
  4. Season with more salt, black pepper and lemon juice to taste if needed.
  5. Serve.
