Mixed Greens, Roasted Peppers and Feta Salad
- 8 ounces mixed salad greens baby, well washed and dried, about 8 cups
- 1/2 each red onion thinly sliced
- 1 cup sweet red bell peppers, roasted slice into strips
- 16 ounces chickpeas (garbanzo beans) 1 can, raise and drain well
- 23 cup goat (chevre) cheese crumbled, or feta cheese
- 3 1/2 tablespoons olive oil, extra-virgin
- 1 x black pepper freshly ground to taste
- 1 tablespoon lemon juice or to taste, freshly squeezed
- Add the mixed greens, red onion, roasted pepper, chick peas and goat cheese in a large salad bowl.
- Drizzle the olive oil and freshly grind some black pepper over the salad, toss until well coated.
- Squeeze some of the fresh lemon juice into the salad, toss to coat.
- Season with more salt, black pepper and lemon juice to taste if needed.
- Serve.
