Shrimp Po Boy with Cilantro Pesto Mayo
- 3/4 cups Cilantro
- 1/4 cups Parsley
- 2 cloves Garlic, Peeled And Chopped
- 2 Tablespoons Pine Nuts
- 1/4 cups Parmesan Cheese
- 1/2 cups Olive Oil
- 1/2 cups Flour
- 1 teaspoon Paprika
- Salt And Pepper
- 2 Tablespoons Olive Oil
- 1 pound Uncooked Shrimp
- 1/2 cups Mayonnaise
- 4 whole Kaiser Rolls
- 1 bunch Bibb Lettuce
- 1 whole Tomato
- For the pesto: combine all ingredients in a food processor.
- Pulse until smooth.
- For the shrimp: In a bowl combine flour, paprika, salt and pepper.
- Heat oil in a large skillet.
- Dredge shrimp in flour and cook in batches in the hot skillet, about 2 minutes per side.
- Drain.
- In a separate bowl, combine pesto and 1/2 cup mayo.
- To assemble, hollow out roll if necessary.
- Place lettuce and tomato on bottom, top with shrimp and smear top with pesto-mayo mixture.
