Shrimp Po Boy with Cilantro Pesto Mayo

  1. For the pesto: combine all ingredients in a food processor.
  2. Pulse until smooth.
  3. For the shrimp: In a bowl combine flour, paprika, salt and pepper.
  4. Heat oil in a large skillet.
  5. Dredge shrimp in flour and cook in batches in the hot skillet, about 2 minutes per side.
  6. Drain.
  7. In a separate bowl, combine pesto and 1/2 cup mayo.
  8. To assemble, hollow out roll if necessary.
  9. Place lettuce and tomato on bottom, top with shrimp and smear top with pesto-mayo mixture.
