Fried Guacamole

  1. Mash one avocado until smooth.
  2. Dice the other and mix both together.
  3. Add jalapeno, onion, cilantro, lime juice and salt to taste.
  4. Form mixture into 12 to 16 thick oval patties.
  5. Place on a foil-lined baking sheet and freeze at least 1 hour.
  6. Place 1/4 cup of the flour in a small bowl and lightly dust the frozen guacamole patties with it.
  7. In another bowl, mix remaining flour with corn flour, baking powder and a teaspoon of salt.
  8. Stir in seltzer.
  9. Heat oil to a depth of 1/2 inch in a large skillet.
  10. Coat floured guacamole patties in batter and fry on medium-high until golden brown, about 3 minutes.
  11. Turn to fry second side.
  12. Drain on absorbent paper and serve.
