Tofu Creole
- 4 stalks celery
- 1 large sweet onion
- 1 sweet pepper, chopped
- 2 Tbsp. vegetable oil
- 1 pkg. tofu, dried and diced
- 1 to 2 cloves garlic
- 1/2 c. button mushrooms
- 8 to 10 plum tomatoes
- 2 Tbsp. vinegar or lemon
- 1/2 c. tomato sauce
- dash of chili powder
- dash of cayenne
- 2 dashes celery salt
- dash of red pepper
- dash of black pepper
- 1 tsp. oregano
- 1 tsp. sugar
- 1 bay leaf
- Saute sliced celery with leaves on, chopped onion and chopped sweet pepper for 5 minutes in vegetable oil.
- Add tofu, minced garlic and mushrooms and cook 2 minutes.
- Add all other ingredients and bring to a boil.
- Simmer until done, about 30 minutes.
- Serves 4.
