Chicken L'Orange
- 1 frying chicken, cut up or use breasts (3 lb.)
- salt and pepper
- 1/4 c. cooking oil
- 1 c. fresh orange juice
- 1/2 c. chili sauce or shrimp cocktail sauce
- 1/4 c. chopped green pepper
- 1 tsp. prepared mustard
- 1/2 tsp. garlic salt
- 2 Tbsp. soy sauce
- 1 Tbsp. molasses
- 3 medium oranges, peeled and sliced in half cartwheels
- Wash and dry chicken pieces; season with salt and pepper. Dredge with flour.
- Heat oil in skillet; add chicken and brown lightly on all sides.
- Remove chicken to 3-quart casserole.
- Drain fat from pan.
- To skillet, add remaining ingredients, except orange slices.
- Simmer 2 or 3 minutes.
- Pour sauce over chicken in casserole.
- Cover and bake in preheated oven at 350u0b0 for 50 to 60 minutes.
- Just before serving, garnish with oranges.
