Chicken Enchilada
- 1 fryer, cooked and deboned
- 1 stick butter or margarine
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can green chillies
- 1 can evaporated milk
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- garlic and onion seasoning
- 1 bag Doritos
- grated Cheddar cheese
- Preheat oven to 425u0b0.
- Season chicken with garlic and onion season.
- Melt stick of butter in large skillet; add onion and bell pepper.
- Saute.
- Add green chillies and evaporated milk.
- Stir. Add both soups.
- Blend well in skillet.
- Place a layer of Doritos in a 9 x 13-inch pan.
- Add 1/2 of cooked chicken to pan.
- Pour 1/2 of soup over chicken and top with grated cheese.
- Repeat procedure. Cover with foil and place in oven for 30 minutes or until cheese is melted.
- Serves 10 to 12.
