Sunshine's chocolate mint & meringue cookies
- 3 large egg whites
- 1/2 tsp cream of tartar
- 1 pinch of salt
- 3/4 cup sugar
- 4 drops of red food coloring
- 1/4 tbsp pure vanilla extract
- 1 cup dark chocolate &mint morsels
- Preheat oven to 375F.
- Grease and lightly flour two baking sheets .
- Beat egg whites with cream of tartar and salt until foamy.
- Gradually beat in sugar , 2 tablespoons at a time , until soft peak form .
- Stir in red food coloring and vanilla extract .Fold in chocolate & mint morsels.
- Drop meringue by teaspoonfuls, 1 inch apart , onto prepared cookie sheets.
- Place in preheated oven .
- Turn off heat , let meringue set in oven 6 to 8 hours .
