Sunshine's chocolate mint & meringue cookies

  1. Preheat oven to 375F.
  2. Grease and lightly flour two baking sheets .
  3. Beat egg whites with cream of tartar and salt until foamy.
  4. Gradually beat in sugar , 2 tablespoons at a time , until soft peak form .
  5. Stir in red food coloring and vanilla extract .Fold in chocolate & mint morsels.
  6. Drop meringue by teaspoonfuls, 1 inch apart , onto prepared cookie sheets.
  7. Place in preheated oven .
  8. Turn off heat , let meringue set in oven 6 to 8 hours .
