Quick 'N Easy Cioppino(Fish Soup)
- 1/4 c. olive oil
- 1 c. chopped onion
- 2 cloves garlic, crushed
- 1 (1 lb.) can tomatoes
- 1 (8 oz.) can tomato sauce
- 1 c. dry white wine
- 1 c. water
- 1/2 c. chopped green pepper
- 1/4 c. chopped parsley
- 1/4 tsp. oregano
- 1/4 tsp. basil
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 can whole baby clams
- 1 can small shrimp
- 1/2 lb. seafood flakes
- Saute onion, garlic and pepper in olive oil until soft, about 10 minutes.
- Add liquid from clams, tomatoes (chopped), tomato sauce, wine, parsley, salt, pepper, oregano, basil and water. Bring to a boil; cover and simmer 20 minutes.
- Add seafood; return to boil.
- Simmer an additional 20 minutes.
