Apple Apricot Bread Recipe
- 2/3 c. WATER, BOILING
- 1 c. APRICOT, DICED
- 2 c. FLOUR, ALL-PURPOSE
- 2 1/2 tsp BAKING Pwdr
- 1/4 tsp BAKING SODA
- 1/2 tsp SALT
- 1/2 tsp ALLSPICE Lowfat milk
- 1/2 c. SHORTENING
- 3/4 c. SUGAR EGG, BEATEN
- 1 c. APPLE, Minced
- 3/4 c. WALNUTS, Minced
- Pour boiling water over dry apricots and let stand.
- Sift flour, baking pwdr, soda, salt and allspice.
- Add in lowfat milk to apricot juice to make 2/3 c. Beat the shortening adding sugar gradually.
- Beat in the egg.
- Add in dry ingredients alternately with the liquid.
- Mix in the fruit and walnuts.
- Spoon into a greased and floured pan, 9x5.
- Bake in 350F oven for 1 hour.
- Cold on rack.
