Chicken With Garlic and Lime
- 2 tablespoons vegetable oil
- 8 chicken breasts
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon lime rind or 1 tablespoon lemon rind, grated
- 12 teaspoon ground cumin
- 12 teaspoon oregano, dried
- 14 teaspoon salt
- 14 teaspoon pepper
- 1 cup chicken stock
- 14 cup lime juice or 14 cup lemon juice
- 1 teaspoon cornstarch
- Using 1/2 the oil, brown the chicken on medium heat till cooked, then transfer to a plate.
- Add the extra oil if needed.
- Fry onions, garlic, lime rind, cumin, oregano, salt and pepper over medium heat until onion is softened, approx 4 minute.
- Add Chicken stock and lime juice, stir well, bring to a boil scraping all the brown bits.
- Return the chicken and any juices to the pan, cover and simmer until the juice runs clear when the chicken is pierced (15 min or so).
- Whisk cornstarch in a bowl with 2 tsp of water, then add the liquid around the chicken and simmer till thickened, about 2 minute.
