Banana Oats and Walnut Bread
- 1 1/4 cup whole wheat flour
- 1/4 cup flour, all-purpose
- 1/2 cup rolled oats or quick-cooking
- 1/2 cup brown sugar packed
- 1 teaspoon baking powder
- 1/2 cup applesauce natural
- 1 large eggs
- 1/2 cup yogurt
- 1 teaspoon vanilla extract
- 2 medium bananas ripe
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup walnuts chopped, or any pecans, or other nuts
- Preheat your oven to 350F (180C) and lightly cook a loaf pan with a cooking spray or greased with butter.
- Mash the bananas in a large bowl.
- Mix in the egg, yoghurt, sugar, applesauce and vanilla extract until well mixed.
- In another bowl, whisk together the flours, baking powder, oats, cinnamon and nutmeg.
- Pour the wet ingredients into the dry ingredients until just incorporated.
- Fold in the nuts.
- Pour the bater into the loaf pan.
- Bake for 55 to 60 minutes or until inserting wooden stick into the center comes out clean.
- Let cool in the loaf pan for 10 minutes.
- Remove from the loaf pan and let cool on a wire rack.
