Banana Oats and Walnut Bread

  1. Preheat your oven to 350F (180C) and lightly cook a loaf pan with a cooking spray or greased with butter.
  2. Mash the bananas in a large bowl.
  3. Mix in the egg, yoghurt, sugar, applesauce and vanilla extract until well mixed.
  4. In another bowl, whisk together the flours, baking powder, oats, cinnamon and nutmeg.
  5. Pour the wet ingredients into the dry ingredients until just incorporated.
  6. Fold in the nuts.
  7. Pour the bater into the loaf pan.
  8. Bake for 55 to 60 minutes or until inserting wooden stick into the center comes out clean.
  9. Let cool in the loaf pan for 10 minutes.
  10. Remove from the loaf pan and let cool on a wire rack.
